ATLANTIC CURRENTS. SEA WEATHER.
The Atlantic currents of the RÃa de Arousa nourish the native Galician mussel with the constancy that only the open sea can provide. Slow growth, firm flesh, deep flavor.
We select by size, work piece by piece and culminate with a gentle marinade that enhances without covering. The result is a preserve that respects the product and enhances its character: measured acidity, aromatic background, Atlantic presence.
ORIGIN
Arousa estuary, Galicia. Autochthonous species Mytilus galloprovincialis, reared in rafts under the controls of the Protected Designation of Origin “Mejillón de Galicia”, the only marine PDO in Spain.
PROCESS
Reception and selection by size and quality. Initial steaming and light frying in olive oil to seal the texture. Cleaning and manual sorting of each piece before packing in RO120 can. Mild marinade made with olive and sunflower oil, vinegar, spices and salt. Sealing, batching and controlled sterilization.
TASTING NOTES AND PAIRING
Firm flesh, deep flavor and balanced marinade, with measured acidity and aromatic background.
Recommended pairing: Young Albariño, Atlantic white or dry white vermouth.
HOW TO ENJOY THEM
Serve at room temperature, between 16 and 18 °C. Open a few minutes before serving. Do not chill: cold flattens the marinade and dulls the aromas. Serve on toasted sourdough bread or in a clean presentation without excess.
